For restaurant and bar design - in fact for all built environment design - trends are constantly changing, or, to put it more accurately, evolving, to keep pace with ever-developing technologies, regulations and fashions.  This, of course, is nothing new: the modern ‘restaurant’ has come a long way from its 18th century origins in post-revolutionary France, and the ‘bar’ even further from its European Tavern and Inn beginnings of the Middle Ages.  However, the starkest changes have largely appeared in the latter, post-war stages of the 20th century, particularly from the 60s as increasingly affluent baby boomers sought wider choices and new experiences.  On the one hand, for restaurants, demand grew for more intimate, social environments in which to spend increased leisure time, and on the other, the number of fast-food establishments boomed to meet the needs of busy workers adapting to changing circumstances, such as greater time constraints, commuting distances, etc.


This continuing evolution of the restaurant and bar landscape provides ongoing challenges - and opportunities - for the sector’s designers and suppliers, and we don’t have to look far to see how current circumstances can influence the direction of this evolution.  In a pandemic-conscious world, these challenges might include the need for greater space to minimise human contact, or the need for increased automation to mitigate difficulties in staff recruitment – currently an increasingly acute problem in the UK.   For product suppliers targeting the sector, specific media and focused events, such as the Restaurant & Bar Show, provide an essential platform, not just for keeping abreast of the latest trends and requirements, but also for connecting with the industry’s key designers and architects to present new product innovations and solutions.
